1 Vanilla Pod
400g Plain Flour
2 Teaspoon Baking Powder
400g Unsalted Butter - Melted
9 Whole Eggs
450g Caster Sugar
35g Honey


  • Place the Eggs, Sugar, Honey and Seeds from the Vanilla Pod into the Kitchenaid with the paddle and beat well into everything is incorporated together.
  • Add the Flour and the Baking Powder and continue mixing on a low speed.
  • Slowly pour the Melted Butter into the mixture, ensuring it is Liquid but not too hot.
  • Once evenly mixed, place into piping bags and pipe into Madeline Moulds lined with butter and a thing even layer of flour. Be careful not to overfill.
  • Bake the Madeline’s for around 8-10 minutes on 180 Degrees, 3 Bar Fan, 40% Humidity, until lightly golden and firm to the touch.
  • Once cooked, allow to sit for 1 minute before removing from the moulds and tossing in Spiced Sugar.
